I would use the Intense. Th ecombination of different dyes and pigments work well with the open grain of white oak. The pigments will intensify the wood grains as the remain in the open end grains. Natural oxidization will tend to yellow the natural colors. The finish use are looking at is new. Not a kitchen floor that's been used a couple years. General cleaning, sweeping mopping n such will make micro scratches that will dull the original gloss. Leaving a more satin tone.

I have 3500K and find that a nice middle ground, not too yellow/warm and not too blue/cold.

North American Oak white Q. Alba has open grain that turns dark with stained or oil finished. It also turns yellow with oxidation and age. There are over 300 species of oak. European Oak, Q. Robur and others doesn't have as open a grain structure or oxidize yellow over time. You can finish it with water-based matte poly and have a light brown tone without yellow or orange if you want that. Currently popular in engineered wide plank. To get a similar look you can fill the open grain of this white dak with a pale opaque stain or seal. Then finish.
