I don't see any colors at all but beige and black (plus the brown wood cabinets), so you could use anything that would go with the rest of your home. I'd stick with warm colors because of the tones that are there now.

black and cream should be easy....just depends on what you like...more bold/ subtle/ geometric/ or other? any of these. the geometric pattern in the backsplash is coming up as a pattern you can replicate. [first 2]..... i like the calvin klein #4.

When you say mats, where were you planning? A long one down the middle might feel busy as both the flooring and backsplash are and it could be a tripping hazzard and a number of small mats even more so. Perhaps just add a one at sink.

Maybe a simple one color antifatigue mat that is all Any mat is IMO a tripping hazard and one more thing to clean . The anti fatigues are usually heavy and not so likely to trip on.The fancy stuff behind the range limits and pattern IMO
