Green bean plants losing their green.

I put milk jugs over my green bean plants to protect them from the squirrels, and they looked quite happy as I peer through the hole in the top. Several of them I removed the milk jugs and after a few days they start to look like my photo. What is wrong? There has been some rain, and I also watered them with well water, although the ground looks rather dry at the moment.

The latter might be the issue. The jugs are sort of cloudy. How can I cause the increased sunlight to happen gradually?

If I remove the jugs on a cloudy day... might that work?
