Every counter material has its dwonsides. Dekton is an excellent product and just like most materials can chip with a straight square edge.

To prevent chipping on any countertops and eased edged profile is best.

Quartz can't have hot pots and pans placed on it as it will scorch.

The real question is How long are the current selections and materials in your space going to last? In otherwords how old are your cabinets? Will they need replacing sooner than later? If the answer is yes it might not be worth investng in Dekton as it can run 30% or more than Quartz.

All the other details you gave about your kitchen have nothing to do with the material you are choosing only the pattern. Without photos , we can't help you with that.

dark floors and relatively dark oak cabinets...? ....I'd pick a white corian ...good choice all around. then do something with interest for the backsplash/ change the hardware and so on.

Light color of a netural. It doesn't have to be white.

Context is key. Help us help you, post up pics. Honestly an angled edge will making the chipping possibility much worse (especially in porcelain type top material), eased (slightly rounded) edges are the best in any material.
