to schluter or not

I am hoping the work on our bathroom will get started soon, and I am not sure about the Schluter vs bullnose issue. I am going for a cute/vintage-ish look for the main bathroom in my 110 year old house. Shower will have basic 3x6 white subway tiles, and the floor and light fixture are below. The contractor suggested doing schluter trim for the window sill (glass block, set back 2.25" like a shadow box), niches, and I think where the tile meets the wall. He said it looks cleaner and better. I was on board at first but now I am wondering if bullnose tile wouldn't look nicer and fit the character of the room better. I am thinking of using Daltile color wheel arctic white, and it does come in a bullnose.
