When I look at photos of kitchens with contrasting backsplashes, they just look jarring to me. Its just a bit of wall between counter and cabinet, and not a place, IMO, for the busy decorative tile that is so popular now. Maybe people want something at eye level to look at while they work? When you look at the room as a whole, however, to me it breaks up the space at an awkward place in the room. There is so much visual activity in a kitchen I don't think a contrasting backsplash is desirable. The slight textural difference of subway tile in your white on white scheme will be beautiful.
