Both are beautiful, and have a "tight" grain. This means you don't see wood grain lines. Cherry has a warmer red undertone. Both accept stain pretty uniformly. That is my 2cents. Best of luck.

As Kathleen said, the cherry has more red undertones where the maple is lighter and most times is stained more brown. It really depends on your preference and pocketbook. We used maple with a chestnut stain and chocolate glaze on our recent remodel. Here's a couple of pictures of the cabinets.
