I would have all deep drawers under the counter all around and never have a low cupboard. Fabulous for storing dinner ware, pots and pans and accessing everything.
Definitely a large pantry area. My best one was two banks of units with big drawers underneath and pantry cupboard from bench height upwards.
And another cupboard to store all kitchen machines and gadgets on open shelves so they could be taken out and used easily .
Pull out mini rack for bottles of oils and vinegars also under bench.
Have also used this for storing all the chopping boards.
    Small desk area with stool.
Plenty of power points and over bench and under overhead cupboard lighting
And most of all not too much fussy detail that is a nightmare to clean .
A separate small fridge for wine and beer.
Pantry and also shelving units that are not too deep so everything can be reached easily.
A wide cupboard that has a lot of racks or shelves to store large serving platters
Appliance cupboard with roller door to tuck away ' breakfast centre' toaster and kettle, tea, coffeemaker, jams and spreads.
    Have fun

I miss my last kitchen which had
-drawers in all the lower cupboards... sure made finding things in the back of the cupboard much easier.
-a recycling pullout with two kitchen size trash containers, which was great for the pile up of drink containers.
-a pop-out false drawer front under the sink for sponges and bar soap.
-a coffee counter near the fridge and away from the main food prep area, so someone getting a drink didn't interfere with whoever is cooking.
-a couple of leftover spaces on either side of our corner-angled double oven, so our cabinet installer ordered matching sheathing/trim molding to create two open shelved art nooks. We had downlights installed, and glass shelves, and that was where I could display pretty vases and bottles of fancy vinegars, spices, etc. It was a beautiful idea to make use of space in the corner of the kitchen that became the focal point!
-our lower cupboards were set out 36 " from the walls, instead of the standard depth, so that the countertops were extra deep. Our current countertops are standard depth, and you always have to shuffle stuff around. If you have room, that's a really nice thing to consider.

I've been dreaming of a Mark Wilkinson kitchen done in the "Mai" style. http://www.mwf.com/ I ordered the cabinetry catalog from England and love some of the ideas they have for cabinetry design.

I would like to have cabinets with appliance "garages" for the bread machine, blender, coffee maker, etc. so that stuff doesn't have to be visible all the time. I'd like my counters to be extra deep so that there is room to stage my baking ingredients pre-measured before I start mixing things up. I'd love to have some kind of thing to hold my recipe card or recipe book up where I can see it but outside of the "splatter zone." Lots of electricity for all the various gadgets I own.

I want see through and non-see-through cabinets some for displaying items others for hiding unsightly stuff. I want at least one tall cabinet big enough to store my mops, swiffers, and brooms, etc. in.

I want a good place for my land-line phone where I have space to take notes or sit down when I take a call.

I want my cabinets to either reach the ceiling or have a soffit meet them so I don't have to climb up and dust the tops of them regularly, meeting the ceiling would give me the opportunity to have a "display row" of small cabinets to show off my teapot collection, while a soffit would give me room to display my Royal Copenhagen Christmas Plate collection.

I want room for all my odd shaped baking pans such as a narrow cabinet for the cookie sheets and trays, a heavy duty pull out for the cast iron griddles, frying pans, and dutch ovens, a pantry that would be heavy on canned good storage, but also give me room for my dry goods and would fit my large tupperware containers correctly. I use the Tupperware "Modular Mates" which stack and have had issues with some cabinets being too shallow for the longer ones. http://order.tupperware.com/coe/app/tup_show_item.show_item_detail?fv_item_category_code=17000&fv_item_number=P10091944000

I'd like to have adjustable shelving for some odd sized glassware like my hand blown stemmed goblets which are twice as tall as any "normal" glassware and I've never found a place with a cabinet that allowed me to store them safely.

I want finishes that will be easy to clean and wipe down because when you have kids baking and decorating cookies stuff gets EVERYWHERE.

Things I don't want include built in cutting boards that slide out like a drawer. They are hard to get clean. Trays in the drawers that have specific places for specific tools shaped like the tool, because what happens when I replace that tool with a new one of a different brand or style that doesn't fit the slot, or if I get new tools there are no slots for? I don't want deep carving or niches that will collect dust or other kitchen grime.

Oh, I forgot, I'd also want the option for the pull down shelving on the higher shelves so I don't have to climb ladders to get to rarely used items. My grandmother was 4 ft. tall and had to use a "grabber" or climb ladders to get items off high shelves. I'd prefer to bring the shelves to me for safety (don't want to drop a soup tureen on my head lifting it down, or fall off a ladder accidentally). Shelfgenie has these upper shelving units that drop down. http://www.shelfgenie.com/

No low cupboards. All wide drawers, have a combination of normal and deep.

I spent three years researching & designing my kitchen before building it. Here's my short list...

More drawers, less doors...so much easy storing pots/pans & lids in drawers.
Small pantry for stock pots, food storage and seldom used appliances...plus you cut down on amount of cabinets needed in kitchen.
Center island with two levels, one for eating the other for food prep. Everyone congregates in this area and it's nice to enjoy company while prepping...and no ones in the way while you work.

Have fun with the design, and good luck!
