A "Rustic" kitchen usually combines different styles of cabinetry, they might be available at local salvage yards for a lower price than new custom units.

There is an active discussion on here about ikea cabinets, and mostly good reviews. As far as open shelving, check out salvage yards for brackets and shelves. New wood can also be made yo look old. I seen a video on internet where the stain was handmade with vinegar and steel wool.

I have seen the discussion on Ikea kitchens that Marlene refers to and, yes, it's worth reading. Ikea is definitely the place to go for both the look and the price point you are after! Here's a sampling off their website, just to get you started.

Also consider going to salvage yards for some unique pieces of architectural salvage, or perhaps reclaimed boards you could use as panelling on the island. And you may be able to find so e vintage lighting or other kitchen accessories at antique stores.
