Your cabinets are fairly traditional/contemporary, and kitchen looks open to at least an eat-in area, if not the dining room so I would suggest a classic ceramic subway tile in a neutral colour (especially because of the burgundy walls).

They don't have to be white, they could be cream, taupe, tan, etc too. Even a warm grey might be nice, because of the black in to counter, and the nickel hardware and future stainless appliances.
White might be too stark with the dark counters and paint colour.

If you want a touch of something different, there are nice crackled and rippled finishes available. That would give the look a bit of style to it, without competing with any future paint colour changes.

You could also add a contrasting or accent stripe all the way around, at the height just under the sink's window. I would wrap the backsplash onto both walls, in an L shape, perhaps ending it where it lines up under the upper cabinet next to the peninsula.

Hard to believe I am recommending a neutral, since I have green subway tiles with a stripe at the cottage, and warm beige square tiles at home with blue and yellow accents, but those colours go with my adjacent rooms too.
