Removing the cupboard on the right side of the window was the right decision! I think some stainless steel open shelving in its place with a display of nice dishes would be fab :)
The other cupboard is a corner cupboard? If you want to leave it without the door, once the cupboards are painted, it will look like a open shelf. Perfect spot for your fav cookbooks. Hope this helps!

my first thought was ...what is behind the stove wall?

Personally I would leave both the cabinets as they were. When emptying the dishwasher I like to have a place to quickly and conveniently put away the glasses and dishware.

As Flair mentioned knowing what lays in back of the stove is important. Also the opposite side of the sink. And the doorway you widened leads to what room?

Perhaps there is a better plan for the space.
