For a more durable and lower maintenance surface, I recommend the natural stone.

I have a natural stone and it isn't actually cold because it stays the same as the temperature at least in my experience ussually our wood floors are colder. I chose natural stone over butcher block.

stone will wear better over time and will add value to your home if you chose to sell it BUT choose the look you like best because you will be there every day to enjoy it

I would recommend butcher block on the island, if that is an area that will see a lot of family use such as eating, gathering, prepping etc.
I've attached one of my kitchen projects, which illustrates a butcher block island in a kitchen that has quartz tops throughout.

Be sure to choose a wood top that is treated with a food-grade oil, making the BB top something that can withstand wear & tear.
Since BB is thicker than typical countertop materials, you can also refinish it by sanding it down, if you so desire.

Engineered Quartz counter tops, such as Caesar Stone or Silestone, are the most durable surface for high-use kitchens. They are stain and heat resistant and will not stain or scratch as easily as wood or stone.

We always recommend a cutting board on stone or quartz counter tops to protect the surface and your knives. We like the attached photo which shows a custom over sized cutting board which services like a butcher block.

We went with wood and love it!
