I like the granite with the cabinets but am not a fan of either of the backsplashes....I'll see if I can give you a couple ideas for keeping it light and bright in a small kitchen!

With a small space, Visually create one element between the counter and backsplash. It will streamline and feel more spacious and open.

Also the color on the subway tile reads more beige than gray. Since the majority of the color and background on the granite is gray, it will look more unified to go with the gray tones.

Agree with other commenter. Mosaic is too busy and will make the counter seem too cluttered.

Ever thought of using a glass splash back? They can be more costly than tile but easy to maintain and clean. Also a lighter shade will add brightness to the kitchen. Or you can use a solid colour to make the place stand out!

Another vote for choosing a different tile for the backsplash. The cabinets and counter are beautiful, none of the samples goes well with the countertop stone. A plain, textured white subway tile or a light grey glass tile would blend well.

I concure with all of the above. The mosaic will rip your attention away from the great cabinets/countertops. The porcelain/limestone "read" a bit too beige. I'm worried that this might turn a bit pink in some lighting.

I would stay as close to the white in the counter tops as possible with as little disruption as possible (glass or plain tiles will work beautifully). There is no need to add another texture like the veining of the porcelain/limestone.

Keep it simple. I like the simplicity of the subway tiles, but I feel like the color of those tiles does not fit with the cabinets and counter (I am assuming that is the bottom square).
On my monitor the subway tiles look much too warm. Look for something cooler.

I also agree with adivra. Avoid the limestone which is porous and will absorb grease projection. I would really like a very muted light colored mosaic for your backsplash and suggest you pick 2 to 3 of the lightest tones (the palest grey, the faintest beige and offwhite for the most present tone) and combine them for a mosaic backsplash with beige or grey sealed grout. Matchstick or very small square tile would be best. It will be more forgiving concerning messiness behind the stove than a single solid color subway tile.

I like the one on the right! I have the same maple laminate...I so want to get rid of it! Good luck choosing your backsplash.
