80's Kitchen Update Input Wanted

We are closing on our very first house in the end of July. We love this house, it is in very good shape with good bones and is unique (we don't like cookie-cutter homes). Not a whole lot has been done since the 80s so it needs a little updating. One of our main priorities is updating the kitchen because we love to cook. So far we know we are going to be putting a darker with reddish hue hardwood flooring throughout the house. So far we are considering the following:
-Knocking out the wall above the stove to open up to the dining room and moving the stove to the other side where the fridge is currently.
-Updating the appliances to stainless steel.
-Moving the fridge to the wall opposite the living room and putting custom built-ins around it.
-Either continuing the wood flooring into the kitchen or putting in slate-type tiling.
-We would like to work with the current cabinetry, it is good quality and in good condition but we don't like the coloring. So we either want to refinish with a darker stain or paint them.

I've been playing around with a design program so I'll attach a couple pictures that I took from that in the comments (they're very rough and we're just learning how to use it).

What do you think!? We'd love to hear your ideas!

    Sure fine. The stove looks rather jammed in where you have it, more like an afterthought. You need better placement for it
    I'd recommend removing the upper cabinets on the sink wall when you open up the space, to maximize the open feel. Add more floor-to-ceiling storage near the refrigerator to compensate.

    Congrats! A couple of thoughts from someone else who loves to cook. Could you make room in the new fridge wall to build in the microwave? I am planning that same change right now to lower the micro and, more importantly, get a real vent over the stove. As for the floor, I'm not the neatest cook so no wood floors in my kitchen. Love my tile.

    Like barrowp said, I too would put the microwave near the fridge. Something like these inspirations below where you have the built in cabinetry next to the fridge, the microwave cook center and a countertop for the small appliances like the coffee maker, blender etc. It would free up the rest of your kitchen countertop space :) In the last pic, the microwave is on a shelf above the counter behind the cabinet door that lifts up.

    One more comment, this is the type of location you need for your range - whether it is an island as shown or a peninsula it should have countertop space on both sides of the range so you can cook without being hampered. Notice it is open to the dining area.

    Thank you all for the feedback! We originally thought about keeping the stove/range on the peninsula after opening up the wall but thought we didn't have enough space and people in the dining room would feel like they were right next to the cook space.

    Denita- I really like your examples, but I'm not sure we have enough space on that wall for a two door fridge and that kind of storage. I've read before that cabinetry should look symmetrical too, that's why we were planning just to have some tall skinny cabinets on either side. Would it look lopsided to have built in appliance storage on one side only?

    We're still in the brainstorming phase and not planning on doing all this at once.

    How big is that wall? If you noticed, I included an example showing a narrow fridge and one set of cabinets (that is the condo remodel, Washington DC) to illustrate that you don't need a lot of room to have the concept done well. You don't have to have symmetry on that wall at all. I don't think it would look lopsided to have appliance storage on one side only.
    Having tile in the kitchen is not weird. Consider the tile that looks like wood. Let me see if I can find one for you...its amazing.
