A little island spotlighted by one pendant light is great! I went into the Houzz kitchen photos and specifically searched 'small kitchen island' to find some that have one light hanging over an island.

LIght Online has really put together some great examples of using just one pendant light. Which type of light depends on your decor and the look you are going towards. Have fun.

Using one light works, you just have to be sure to use the right size fixture to compliment the island. For instance in the pictures above, I think the Gallery light is too small, Today's Kitchen is too large, while SW Victorian is just right. (Sounds like the Three Bears!).
