Hi---it's really your own personal preference. Browse Houzz and see what captures your eye. For me, I am drawn to light counters with a contrasting island cabinet color or countertop. Take some time, and search---you'll figure it out. Good Luck!

You could go either way depending on what you prefer. Airy and light and bright, go light, like stark contrast, go dark.
When you look at pictures of white kitchens on Houzz, what appeals to you? Sometimes even a cohesiveness can be run through the house, same tone cabinets or counters. Try to set a tone for the whole house.

Either will work.
If you have an island use the opposite color. EG: If you go light for the entire kitchen countertops -- go darker on the island. (Like photo 3 above by Natalie). This will add interest to your space.
If you go dark - don't go too dark - your kitchen might look like an Oreo cookie,
My preference would be a medium tone with not too much pattern - Quartz has very little pattern and many colors and tones to choose from - have you considered Quartz? Wonderful product - won't stain, super durable, can be buffed if you get knife marks and does not need to be sealed every year like granite. Also, some granites can emit radon, depending where they were mined.
