As far as I know all sunflower seeds are edible. Then of course, the ones with bigger seeds are best for roasting and cracking. I like them raw and fresh too, when they are slightly hardened on the plant. Actually I am eating some right now. Well, they have gotton too hard, I will roast them.

Black oil (aka oilseed) sunflower seeds - the most common type used in bird feed - are usually not considered edible by people as they can quickly turn rancid and can cause digestive upset. But they may be pressed to extrude the sunflower oil in them and if refined it makes a good cooking oil.

Striped sunflower seeds (aka gray stripers that are white with dark gray stripe) are the variety used as people food. They have a much lower content of oil and when roasted dry and/or salted are quite good.

The odds are what you have is a black oil sunflower.

The seeds would probably be pretty unsatisfying, at best. But really, yes they are edible and in and of themselves are not in any way harmful to you if you were to eat them.

I have always left sunflower heads (the ones the squirrels didn't get), as well as things like coneflower and rudbeckia for the birds over winter when forage is minimal. They reward me with brightening the otherwise dreary and gloomy season.

Gray stripe sunflower seeds are often referred to as CONFECTIONERY sunflower seeds.
