Fall/Winter planting zone 9

This is going to be my first year trying a fall garden and I just wanted to make sure I'm not doing anything wrong. According to some random farmers almanac I found online it isn't to late for me to start planting for the fall so I started gathering some seeds.

-Cabbage: my family loves cabbage so I wanted to try and grow some to supplement the amount we buy.
-Chioggia Beet (bassano): I wanted to try a root vegetable and beets are delicious even though I don't think I've eaten this type.
-Sugar Ann Snap Pea: My family eats a lot of peas but I also figured it would help return some nitrogen to the soil where I grew my corn.
-Blue Curled Scotch Kale: I've never eaten kale before but I was told its delicious so I decided to give it a try.
-Amarillo Carrot: another vegetable that I've always wanted to grow.
-Morris Heading Collards: We go through a lot of greens so I'm growing this to try and supplement as well.

Would any of these be to difficult for a beginner to grow?
Is it to late to start any of these plants?
I've also thought about potatoes but according to the almanac it's to late to grow those but I was told they were a cold weather vegetable, could I still plant them?

Everything but the cabbage seeds were bought at rareseeds, the cabbage seeds were bought at Walmart.
