I'm so very sorry about your house fire--how terrible!
I'm going to make two different suggestions for the floors:
1. White oak in a natural or light-medium stain. White oak is one of the strongest hardwoods and thus the most durable for kitchens, pets, etc. The white oak floor in my kitchen is 90 years old and still going strong. The previous owners refinished it, but that was over 15 years ago, and we have two rambunctious aussies. The medium to light shades of hardwood floors show dirt, pet hair, and scratches less.
2. Travertine. I do not have personal experience with travertine, but some of the designers here (I'm thinking of Charmean Neithart in particular) have recommended it highly for kitchen floors in families with pets.

We recently did wooden floors (white oak in a natural stain as suggested above) for kitchen, dining room and family room. It looks great and seems to be holding up well. We have a long-haired dog ( he's like a swifter) and seem to be sweeping up hair and dust bunnies daily. I do have concerns about how the wood will hold up in the kitchen especially in spots like by the dishwasher. If I were going to refinish the floors, I might spring for a Bona finish. We did rule out tile because our kids (and we) seem to be dropping glasses, china, etc. pretty regularly.
