Observation on corn

I got a lot of very good sweet corn this past summer and put it up in a variety of ways. My favorite (and will only put up corn this way in the future) was the oven roasted corn with butter, sweet cream, salt/pepper. It was heavenly. I put it up in a variety of sizes of freezer bags, to include several gallon sized bags not quite full for family get togethers. Just throw one of those in the crockpot and people just raved about it. I also put up some ears and ran a bit of an experiment. One batch I did according to the usual method of blanching. The other I simply rolled the ears (skins and all) in plastic wrap very snuggly then put in freezer bags. I didn't care for either one very much, too soggy but the taste was still very good. I only tried the whole husked corn idea on a recommendation from the lady who gave me that corn. What will happen is the chickens will get some good treats along the way, LOL. Either that or I will try them on the grill, maybe that would take some of the sogginess out of it. I think I prefer frozen corn to canned, what do you all do? Lori
