If the characteristic flavor of traditional sauerkraut is what you want, it will require fermentation. Sauerkraut is not difficult or tricky to make, by the way.

Chow chow is a canned product which is based on cabbage and includes other vegetables. Chow chow is high acid, like pickle relish, so it can be water bath processed. It can be made hot and spicy if you wish.
