Using the All American 921 to Water Bath Can

The other day I wanted to up my volume, so I decided to use my AA 921 pressure canner as a water bath canner, in addition to also using my 21 quart granitware canner. I filled the AA the same way as I would my graniteware pot, got the water really hot, lowered 8 pints into it, made sure there was between 1-2 inches covering the jars, and put the lid on slightly ajar so that plenty of steam could escape. I kept it at a rolling boil for the full 40 minute processing time then rested the jars for 5 minutes with the lid off and the heat off. I had 100% seal rate.

Any issue with doing it that way? I wasn't sure if I closed the lid fully that the steam vent would allow enough steam to escape.

Second, could I have doublestacked the pressure canner, putting the second rack on top of the first 8 pints and adding a second 8 pints? Then I could omit using the graniteware pot all together.
