granite should go straight onto mortar bed, you may have to build it up to the sub floor of the bambo, the granite tile is usually 1/2 and slabs are 3/4" to 1'4" thick.

It will depend on the type of sub-floor you have and the thickness of the materials you're using. If you have a concrete slab floor and standard 3/8" tiles, then you can bed them directly in thinset on the slab. Good quality bamboo flooring will be 3/4" thick so you can align the two quite easily.

If you have wood framed floor (16"O.C), you'll need a minimum of a 1/2" mortar or silica board as a backer, with the backer set in thinset and screwed to the floor. In this scenario you'll be higher than the bamboo when you factor in the tile and its thinset. (Overall +/- 1") A flush tapered transition threshold will be the best way to blend the two surface heights together
