Replacing fixtures, rewiring

I am in the midst of a total renovation of my bathroom (complete new subfloor after sistering joists, knocking down several walls, etc.). I am replacing the lighting fixtures: 1. a ceiling light with 2 control switches (3-way), another ceiling light with 1 switch (single pole), and a vanity light.

Presently, all the power is off and the old fixtures are gone. I am determining the old wiring configuration (circa 1930's) but am not really ready to attach the new fixtures. I want to turn the power back on. Can I just "cap" off the wires with - and I don't know the proper term for them - the plastic caps that you screw on to attach 2 or more wires together? Or will I need to keep the power off (for days) until I wire the new fixtures in?

Thanks for any help.
