Are you asking specifically for your kitchen or are you also considering the rest of your house as well?

Regarding kitchens, I think it depends, many look finished without any window treatments, others look like there is something missing. On thing to consider is solar blinds, there is a curent 30% tax credit on them! It blocks the heat and other peoples view into your home, and you can hardly tell they are there:

Though, something more with the style of your house would be shades that fit inside the window, so you still see the moldings and trim. Something like this:

I feel cold if there aren't any window treatments, so I use them on most of my windows. Even if I want just a valance, I will hide roller shades underneath for heat/light control and privacy.

If you want the moldings to show, then design something to sit inside the frame, but it can block more light than a treatment that is designed to go over the frame.
