Countertop conundrum!!

I'm so frustrated with countertop shopping. I knew the "new" laminates were too good to be true. Can't get a nice edge all the way around for my island...I'm disappointed that I'll have to pay about $1800 more for a solid surface to get the look I want for some minor updates to my 90s kitchen. I'd work with what I have, but I don't think it's a DIY project. Ideas? It's light beige laminate with a subtle grid pattern, wood trim, and along the 4" backsplash is a brass strip to hide the gap between the counter top and the wall. They're awful! We've already painted the walls, changed out the lighting and the fridge to stainless steel (will change out DW, range and micro eventually to SS). I am going to paint the cabinets white and add a backsplash. hardware will be silver or black. I want a carrera marble look for the countertop.
