Future Leather Help

I made leather out of some super good tasting berry sauce. I dried it in the dehydrator... for about 8 hours. When I checked the top was dry and no longer sticky. I removed it to a sheet of plastic wrap where it grabbed on and refused to be removed . I dried it some more and got it off the wrap and then dried it even more. After another four hours I was finally able to transfer it to parchment paper and roll. I figure I probably had at least 16 hours of drying time. The directions said 8 hours at 135 degrees. What happened?
