I was in a very high end hotel recently with 8' ceilings and they used a simple base on the outside edge of the ceiling itself, picture framed the corner transitions. It presented better than crown since it took none of the wall height away, but it finished the ceiling and gave it a great look. Consider this

Our last home was Frank Lloyd Wright's Arthur Heurtley house, of which we restored to original state which. In that home, the back rooms have 8 ft ceilings. The moldings are simple flat but layered, set lower than where the ceiling and wall meet, the color of the ceiling extended down onto the wall to meet the molding (as your pic #2). This layered and dropped color, offered the the visual perception of a higher ceiling.

Update - someone suggested that I paint the crown and stain the base. Any thoughts on this configuration?

Recommend staining all the trim: base and crown.
