You could add a trough sink with two faucets, which will accommodate two people and it looks like you would still have enough room on the either side to rest items or if you moved sink over, you should have a decent counter space on the side.

2 sinks could fit, but not that it would be comfortable. Or you could put the drawers in the center and separate the two sinks.

The vanity is only seven feet long so I am wondering if a trough sink would work

also do you think I should go wall to wall with the vanity or leave some space on either side

Can't see the details around your tub, but if you don't extend the vanity in the same space you have currently, it's likely there will be material missing that finishes the tub area.
