It's pretty late to start most cool season veggies from seed - greens could work - but your local garden center should have starts of fall veggies available - broccoli, brussel sprouts, cauliflower, cabbage, kale, etc. And a lot of root crops can be grown in fall - beets, carrots, turnips, etc. Now is also a good time to plant garlic to overwinter and any herbs other than the annual varieties (like basil, dill or cilantro).

And I'd strongly urge you to get a copy of the Maritime Northwest Garden Guide. This is the veggie gardener's "bible" for this area, outlining what do on a month by month basis (what to plant, when to start seeds, when to set out starts, winter protection, soil prep, organic gardening methods, etc.). Most area retail nurseries sell copies (under $20) or you can order from Seattle Tilth.

Now would be a good time to start cover crops, if that will be part of your regimen for the raised beds, unless you have already filled them with amended/enriched soil.
