Wow --you have a blank slate and not much information regarding your tastes or budget. Tile is just one solution. You might consider tin ceiling tile. Another treatment that is interesting is mirrored tiles that have had a mercury glass treatment to make them look antique but still provide a cleanable surface. What ever you do, I would go all the way to the bottoms of the upper cabinets. There a lot of things you could do with the wall behind the sink. If you go with tile, a tile mural might go nicely there. You might also consider adding some glass display shelves there (glass so the light would pass through). Consider that whatever finish you choose, you'll likely want to change out the switch and outlet plates (or paint them) to match.

Agree with Pam regarding the shelving. You really don't need a full height b/s over the sink. I would go with perhaps a glass subway in a classic dimension (3x6 or 4x8) to add interest and reflection. You can then display some (few!) items on the shelves. A collection of white and simple items such as mugs or jars would be attractive and not too busy.
If you have a low ceiling, consider running subway tiles vertically to add visual height.

I like Ron's idea as well. A tumbled marble will really soften the contrast between your dark countertop and white cabinets. The stone tile will come in a variety of sizes as well. You could do a 4" x 4" (as pictured), 3" x 6" subway tile, or even a smaller mosaic tile if you prefer that look. You could even combine the sizes, as the photo that Ron shared shows.

Ron Will had a great suggestion. I would also run the backsplash up the ceiling to the sink, it will have a bigger visual impact and I also think a natural stone will add a nice textural element. Here are some other product suggestions.
