Need advice on countertop depth

We are remodeling our kitchen and narrowing our peninsula to allow for more walk space (~49"). The base cabinets will be 24" deep. I don't have enough room on the outside of the peninsula to allow for barstools because it would crowd our dining table and chairs. (We have about 36" between the end of the cabinets and the dining area.) My question is how deep to make the countertops to allow for the most workspace without 1) looking weird with an odd overhang, and 2) crowding the dining area. Also, this counter will have our sink (17" deep, undermount) and faucet. Or should I narrow the walk space in the kitchen a bit to give more depth to the counter? I can provide a drawing if that helps!
