Need help on my kitchen layout

We're planning on renovating on house, and I need some help with the layout of our small kitchen. Here is what we have right now:

Originally this was a kitchen + dining room, and we've since expanded to the left and have moved the dining room there. The staircase shown there current starts in the kitchen, then turns to cut in between the kitchen and the receiving area. We are planning on moving the start of the staircase from its current position to the opposite side, in the receiving area, freeing up that space in the kitchen completely.

What I have thought of so far is having a peninsula with some bar seating there in the middle where the round table is now, connecting to the left side, and forming something like a galley kitchen. Another option would be to have a u-shaped kitchen by adding a counter to the left wall in between the two counters instead of leaving it empty. Though I wonder if my space is too small for it. I suppose I would have to leave the refrigerator where it is, as there doesn't seem to be another place where it makes sense. And I also need opinions on where to place the range and sink, I know I definitely have to move the sink, the range maybe not. We're planning to replace our range anyway, so I have the option of getting a standalone range or a wall mounted oven where the range is now and having a separate cooktop elsewhere.

Any ideas would be greatly helpful. Thanks!
