Kitchen Lighting

I have this up in the lighting forum but there doesn't seem to be much traffic there.

My wife and I are remodeling our first home and the last part of the design for the kitchen is lighting. Here is our layout and what we plan to do for cabinets. The kitchen is 187 sq ft. All of the blue cabinets will have led under cabinet strips and the cook top which will have a range hood with a light. I will probably put strips above the cabinets in the pink areas. The red dashes are ceiling joists and the dash line perpendicular to those is the peak of the vault with a bit of the sink and the seating area below the down slope on the other side. The square roughly in the middle is the HVAC vent but I don't think the duct will be an issue. The blue borders are walls and standing at the sink looks over the dining room and living room, we would like to try and avoid pendant lights if possible.

The ceiling is vaulted with a 3/12 pitch (14 degrees), how necessary are sloped housings? There seems to be many more options with regular housings and we prefer the look of the flat diffused led lights. I'm concerned we may need shallow cans close to the far right wall with the window, not sure a low profile, retrofit, air tight, IC rated, sloped housing exists. We redid her parents kitchen two years ago and the electrician said eight lights will look good in here, I cut the holes and he put in the regular cans with retrofit led's. They have a much steeper ceiling with a different layout and they have plenty of light.

Any help would be greatly appreciated. I'm probably over thinking this but if its not close to perfect I'll be tortured by it as long as we live here.

Side note, does anybody have any website or software suggestions for laying out floor plans like this? Short of learning Sketchup I didn't find anything that seemed worth using. My really close to scale drawing took a few tries to get right.
