I would hold off until after you move in. If there is no privacy or glaring sun issue, I'd probably leave the kitchen windows uncovered.

I don't like curtains in the kitchen in general. Especially surrounding the range. Grease!!!

The vaulted ceiling carries thru to the back porch, so there are no issues with sun. And privacy is not an issue as we are out in the country on our own land.

I wouldn't do curtains at all. If privacy or sun not an issue leave the window. It's more clean that way and you get beauty from your window and scenery. Why distract ?

Roman shades in sage green would compliment the brick and wood.

What other colors are you using in the open floor plan? Sofa color? Accent chairs?

I'm sure you have many pressing issues and I would live with the windows as is for a bit..see how you love/dislike the bright light and the simplicity. Easy to add down the road and once you add your accessories, etc. the kitchen will feel warmer.

I agree with all the comments that say live with it for a while. That being said, I think you may end up wanting a little softness on the windows, but I would go with something simple like Roman shades.

You could install cornices at the top of the windows to extend the line of the cabinets around the kitchen and then install plantation shutters or shades below. Those lights over the island are mounted way too high. I have lowered them in the picture

the light over the table is mounted too high and it's not really large enough for the room. Your space really requires at the very least a 2 level or even three level chandelier.

Another reason to have a window covering is to avoid the black hole/mirror at night time. Rooms look brighter at night when windows are covered.

I've been using roman blinds for decades on kitchen windows. They are perfect, go high and out of the way to stay clean, can be clean lined or pouffy balloon shades or somewhere in between and if you make them yourself it's easy to take them down to wash. Unsure whether bought roman shades can be taken apart to wash or not.

If you would like window coverings in the kitchen, I think roman shades would look great. They would offer a soft element in the room, and are available in so many colors. The light would glow through the fabric, and light the kitchen beautifully. Here are some ideas:

You could do Roman Shades outside mount, mounted 4" above the window. This way you can see the shade, whilst getting the maximum about of light through.

Don't forget awnings if you just have a sun problem. Fabric would soften all those hard surfaces.

Even if you don't need privacy during the day, most people do like to have the option to lower a blind/shade at night. I wouldn't do anything too formal since you have the rustic wood and the exposed bricks. White faux wood blinds or screen shades would give you privacy at night and they are washable, so they work great in kitchens.

Roman shades would also be nice and add color and softness to the window. However, I would hesitate to recommend fabric over a sink/counter area because of splashing.
