This is so funny because we are in the process of doing a nursery for our nephew's little boy and they picked gray and aviation. We ended up with the Carter's Take Flight set from here.

Currently helping my daughter in law with a nursery. We purchased a used dresser and Painted it navy blue. Added antique brass/gold hardware. She will put the changing pad on top of the dresser and someday when pad is no longer needed the dresser is still usable unlike a traditional changing piece. Bring in red and white items. Red,white,
and blue never go out of style. I am including a picture of a cute idea for a wall. Instead of stuffed animals you can use aviation items or toy airplanes.

Rather than buying just a changing table, get a dresser that you can continue using later, and put a changing area on top. I would stick with a wood tone or white for all the furniture, so you have more options going forward with colors. You may use the crib again later for a second baby, maybe a girl, and to me white is most versatile.

We bought an antique buffet to use as a changing table/dresser in my great-nephew's nursery. It was already painted white, and we painted the drawer fronts gray and changed the knobs. The changing pad cover came from Etsy. There are lots of baby and nursery items on Etsy, so it's definitely worth looking there for one of a kind items. We got giraffe wall decals and the most adorable mobile from some Etsy sellers.

Are you going with an aviation theme or travel theme? If aviation, model planes made into a mobile would be cute. Frame photos of old airplanes. The bedding mentioned bedding would be perfect. A shelf with children's airplane books would be great. My son loved "Planes" by Byron Barton.

For the crib I would recommend grey or a wood tone-- the white looks a bit feminine to me as a full size bed, with the rolled ends.
