In my opinion, no. You could freeze them in ice cubes.

The only way I have ever done them is to pick the chives, and if they are very clean, no need to wash. I take a large pair of scissors and snip the bunch of chives I have in my hand- to the size you want. Put them in small ziplock bags and freeze. When you need some, just grab a little out the bag. They stay nice and green that way. Can be used in recipes as you would use fresh chives.

They retain so much moisture it would be hard to dry them. I like to freeze all my herbs in ice cubes so I can use them in soups in the winter, and I like to use mint cubes for water and juice.

You could pot some up and grow them indoors over the winter.

I attempted to dry some just a few weeks ago and they didn't turn out very good. Had to process for way too long to get the moisture out of them and then they were like straw. I second the freezer method. Lori
