Lighting in a Historic Renovation

Our 1885 Victorian home caught fire earlier this year, gratefully we were all fine, but the house had to be totally gutted. We salvaged what we could (mantles, floors, Windows) and are in the process of rebuilding now which is providing many exciting opportunities for modernization. Here's the question: each main room downstairs used to have a single overhead chandelier with a plaster medallion. Do we add can lights? Our kitchen had been renovated and had cans and we are tempted to put them throughout the house or at least upstairs in the bedrooms. Any input on whether this is a good idea bad idea is appreciated?
