I would not try that but why not a really attractive knife block I have 12 global knives and i love just a simple modern knife block in stainless , the one I have has a black plastic liner that can be removed and cleaned , there are also really cool magnetic ones that sit on the counter

The problem is that I wanted to avoid having a knife block because my counter space is EXTREMELY limited. I actually used to have the same stainless Global knife block because most of my knives are Global. I got rid of it. I also recently purchased quite expensive Japanese carbon steel knives and would rather not store them in a drawer. But I agree with you; I doubt very much that I could mount magnetic strip to granite since I cannot use screws.

Maybe mount the magnetic strip with industrial strength double-sided tape?

Make sure the mounting surfaces are clean and dry before applying the tape.

There are some very aggressive adhesives on the market, such as Liquid Nails, that should do the trick. Ask at your home improvement store which specific formulation they recommend.

I installed mine with command strips. no issues.

What are command strips? I'm worried about the heat/cold and constantly pulling off the knives making the tape come loose over time.

heat and cold aren't really an issue in conditioned homes, but regardless command strips (3M) can handle fairly heavy loads depending on how many you use. mine can hold around 12 pounds. my knives probably weigh one pound total. it's not going anywhere.

It will be installed on the wall adjacent to the stove so heat and steam can be a big issue. I have a powerful fan, so I hope it won't reach that far....you never know.
