What herbs do you like to eat?

I'm already growing most of the ones I like to eat/use, including thyme, oregano, lavender, basil varieties, bee balm, and mints. I like parsley and sage, but have struggled with growing both of those. I'm trying borage this year. I like to use my garden to try new things -- whether it's edible, medicinal, or just beneficial for the insects -- and I'm fairly new in delving into the world of herbs.

Well you seem to have most of the usual ones. How about Sorrel? Rust Red flowers. Or Achillea millefolium in pink, red or white. Calamintha nepeta? Nepeta cataria? Echinacea? Monarda? Agastache foeniculum? Hyssop? Malva moschata?

You listed quite a few that I'm not familiar with, so thanks! I'll look in to those.
