Sorry for all the questions! We are remodeling the first floor of a house built in 1907. We've found some amazing but quirky features, including a corner brick chimney in the kitchen that was covered in fake brick tile! We chipped away at the tile and here's what it looks like:

Our problem is that I'd love to keep one side of the brick exposed but the other side would need to be covered because of the plumbing stack you can see to the left of it. What should we do? Drywall all the brick? Or build an L shape of drywall on the left side of the brick but keep the side we're looking at exposed? Our contractor is voting for the second option. We've already ordered our semihandmade cabinet fronts and bought our IKEA cabinet bases so we can't change cabinet configurations.
