Unless you have a fence or spray with deer deterrent, the deer will walk right past the herbs to the delicious other plants.

If you're looking for plants the deer won't eat, any fuzzy leafed herb or highly scented herb (like thyme or lemon verbena) will do. They spread, though.

Agree that many of the strong scented herbs like the mints, garlic and onion chives are of no interest to them. But like Susan said, they just step over or around them to get to the good stuff. Fencing, tall fencing, is the only real effective deer control. Even the deterrent sprays wear and wash off and the deer soon ignore them too if they really want what you have growing.

rosemary is pretty safe

As noted, there are many herbs that deer won't eat, but I'm not aware of any that will actually deter them. Plant a fence. Motion-activated devices that scare deer work for a while, but they eventually learn to ignore them.

Nothing will deter them and they will nible and taste practically everything. As far as herbs they don't eat in my yard are basil and dill. In fact i find they don't really touch any of our herbs.
