How can he possibly fix that edge with a bull nose when the tile are not even

The part above the door, where it is even, was going to get bullnosed. The uneven part would be covered by trim.

The door should have been trimmed before the tile was installed. He can't cover it with door trim because that trim will not fit the same as the rest of the door trim! A dunce? Or a beginner?

I've got wood planking partway up my bathroom walls that butts against tile. Just as simstress described, the trim went up first, then tile was cut to fit against it. Bullnose only on the portion above the trim.

Honestly, the GC has been amazing for everything up to the tiling. I'm going to have to talk to him about fixing it though because I'm not liking how this is turning out.

My tile isn't the same format as yours, but the concept is the same. Door was trimmed first. Bullnose begins at the top of the door trim; the tiler neatly cut that tile to fit around the trim.

It's going to be a challenge to cover that with trim unless the tile goes all around the door. I have always butted my tile to the previously installed door trim. As for the bit above the door...bullnose will work, or you could do a wainscoting effect over the door and up to the crown molding using 5" midfield board. But really depends how he finishes the trim below whether the wainscoting would work.
