Flavor turns once it bolts just as with most herbs and leafy greens. You can try cutting it way back - like 2-3" tall max and hope for new growth if the weather cooperates. I'd let some of it go to seed to save seeds - say 1 container and give the rest a crew cut.

Some claim that if you soak the leaves in ice water for an hour or so some of the bitterness is removed. No personal experience with that.

If Mojito is the variety name and not just a descriptive term then it is a hybrid and won't come true from seed. Not that it needs to considering mint is a hardy, vigorous perennial.

It is the new growth you want so cut the old stems back further and maybe give them a low dose of fertilizer. They should bounce back fairly quick.

It is perennial so there is no need to save seed, even if it did come true. Just clip the plants over. Water and feed occasionally, since they are in pots. I can't say I've ever noticed a change in flavour from flowering mint. But that's clearly a personal perception. I'm not sure the phrase 'bolting' really applies for perennials since it implies that the plant in question is finished which mint is definitely not. But again that's a personal opinion.

So trim everything back to 3 inches above the soil?

3" or less. It is the new growth you want.
