That's right, folks.. I have no pictures and I ate my samples!.. lol

Now, this was my mom's kitchen in Eunice, LA, but we had some fun cooking..

My mom makes some of the best gumbo, but cannot get "good" Mexican food. I say "good" because.. heck, MINE might not be any good.. lol, so.. I headed to Eunice to let her see her grand babies and to cook some food and.. that is exactly what we did.

We arrived around noon on Friday afternoon. The wind was brisk... the trees waving.. and in the air, a sense of sssssaaaallllsssaaa..

(that is salsa with a little flare...lol)

For most visits, Mom has a fresh pot of gumbo waiting, but for this one, I said, "don't waste the food... we won't need it.."

Friday night, we cooked Enchiladas Del Mar....but we used chicken instead of seafood because some of them do not like seafood ;) This is crazy.. I know, but let's move forward.

Del Mar is "of the sea"? So, we had a Chicken Enchiladas with a Monterrey pepper jack and sour cream sauce. Since I never really go by the recipe.. in the words of Jeffrey Rush, "the more like guidelines..", I added the pepper to the jack and added some pico de gallo in with the shredded chicken along with some mozzarella inside the enchilada and a dash of jalapeno that was minced.

We also had some Chalupas with the same shredded chicken/sour cream mixture, plus we had a huge bowl of fresh guacamole.

We ate so much we hurt... it was worth it... :P

Then for Saturday, I browned some beef with more pico de gallo, corn, some cumin... threw it into a large flour tortilla and deep fried it. Then I covered with the same sauce as the day before and lots of diced tomatoes, guacamole, sour cream, and green onions.

Breakfast we .. aw heck.. a lot of stuff thrown together and scrambled...

Yea, it was good, but I was tired of cooking.. well, till I got home.

Did I mention I now have over a dozen packages of frozen crawfish tails and boudin? oh yea.. it's about to get goooooooood.
