Are you willing to move the plumbing and door?

You could leave your washer and dryer where they are and add a countertop over them, for folding. You could replace your uppers, with deeper ones (18”-24”) and run them to the ceiling, for additional storage, then have a hanging bar, from the cabinet to the wall, over the sink. You might want a wooden valance over it too (it looks more finished). You could have tall, custom, pull-out cabinets built in the niche, one for vacuums, brooms, etc, and one for laundry baskets and an additional regular cabinet on top, that fills the remaining space to the ceiling. If custom is too steep for the budget, you could just build a deep closet in the niche, with shelves on one side to hold the laundry baskets.

I recently renovated my laundry, which is similar in shape to yours. I opted for a pull out drying rack (from Amazon) instead of the shelf, seen in the picture I posted. It’s fantastic (comes in a few different widths) and folds away, when not in use.
