It really depends. I think a lot of wood look tile won't age well, but mainly because people are going for the cheaper options that have less pattern variation and choosing the wrong grout color. LVP is harder to get wrong IMO, but it can look very cheap if you go for the very cheap options.

Don't worry so much about trends. Although I do think going for a natural stain wood look (rather than the grey) will feel more timeless regardless of the material. Choose what works best for your home and family

Trends are trends. What is dated yesterday will be the next big thing tomorrow. Go with what you love.

I like both materials, but they are different. With tile you're going to need someone to install it, they can crack or be broken if things are dropped on them, but they are durable and will be great with water (assuming a pool in AZ) and would be good in kitchens (where there will be grease, water, etc.). The vinyl planks are surprisingly not cheap, but you can install them yourself if you're inclined/able so you can save money there (loose lay vinyl planks don't even need adhesive). The material is basically indestructible, but IF something were to happen, it's great because you literally just lift up the damaged plank and lay down another one. They are also good with water since they're just plastic. Depending on your house/floor, you may have to lay a moisture layer underneath it, but with a cement slab house you should be able to lay the planks directly on it. I personally don't really like the way LVP feels under my feet, but that's just personal preference. I also would say that I don't think the LVP cleans very easily. You have to clean with something damp, you can't really just sweep or swifter them, after you do you have to go back over them with something wet. Having said all of that, I don't think the look of wood planks is going to go away any time soon, so I wouldn't worry about that.

I think tile everywhere would be hard on your feet. We just built a house and put LVP everywhere except bathrooms and laundry, where we put tile, and all looks very nice.

I agree that you shouldn't consider trends as much as your own preference. Each option has its pros and cons to be considered which far outweigh trends (which tend to cycle). Think long-term; What will best fit your lifestyle? Whatever you decide, please don't go with low quality wood look tile or LVP, which will end up costing you more money to replace sooner.
