You should either have 2 cabinet colors and 1 counter color, or 1 cabinet color and 2 counter colors. Otherwise it’s too much going on. You can’t have everything embellished; you need to give the eye a rest.

Bianco Romano is infamous for easy staining. I’d choose a more bullet-proof granite; there are many. It’s also hard for 2 patterned granites to look good together. One needs to be solid, or almost-solid. And there is nothing “farmhouse” about 2 granites. You could also choose a granite and a man-made solid quartz (assuming you have one cabinet color). But that won’t be very farmhouse either. You are a bit of a mishmash in your goals. Perhaps take a deep breath, hold off to fine tune what you want, and also look for online pics of inspiration kitchens you like.

Do your backsplash last, after everything else is done. It’s the best way, plus you will remove for now one source of stress.

Soapstone (or a granite that mimics soapstone such as Negresco) on the perimeter and a granite with white and gray for the island. There are many white/gray stones to choose from. Then you don't have two patterns fighting with each other.
