This beet kinda got away from me. But it was delicious. Half a beet feeding two people.

Now, a here is a question that I think is unrelated to beet age and size. Some of my beets have very noticeable white stripes inside them. Smaller ones and larger ones (including this one). Why is that? Is that a nutrient issue? Or growing conditions? However, In the same bed, I sometimes see those white stripes, and I sometimes don't. Those white stripes actually almost disappear when the beet is cooked, and don't affect flavor or texture.
