Oh yeah, also, will a peach ripen off the tree if picked too soon?

Peaches need sunlight, in order to obtain maximum

sweetness and color. That's why proper pruning is

so important. Peaches that don't get proper sunlight

are of lesser quality. If a peach is picked too early,

it will not "ripen" any further. It may get softer, but the sweetness

comes from the sun

Generally, fruit that is located at the exterior portion of the tree (top and sides) will ripen sooner than those on the interior, primarily due to the amount of sunlight they receive. Fruit located in the interior will ripen in due course.....just not as soon as the 'edge' fruit.
